Chateau Rabaud Promis 2005 MAGNUM - Sauternes Grand Cru Classe
The terroir of Rabaud Promised Premier Cru in 1855 and is close to Yquem, is a more complex appellation with a sandy clay subsoil covered with a large sheet of Pyrenean gravel. There are 80% Sémillon, Sauvignon and a little muscadelle. The harvest is manual and takes place in several tries, ie in several successive passes to pick the grapes concentrated by botrytis cinerea, a fungus of the noble rot. Winemaking following is fragmented, with fermentation in stainless steel or oak and aged for 12 to 18 months in barrels more or less according to the new vintage. Final assembly takes place after a tasting in the family, to develop an overly responsible Sauternespas sugar, well balanced between acidity and alcohol, with smoothness and perfect aromatic expression. Its color is golden, its complex aromas (pineapple, apricot, flowers, roasted apple, honey, cinnamon, vanilla) are expressed with elegance, purity and finesse. In a subtle and silky style, this large perfectly accessible Sauternes offers all the gluttony of fresh fruit and melting.

Vintage Description | A homogeneous harvest grapes in perfect health and a relatively reasonable volume (6,000,000 hl): it is indeed an exceptional vintage! Ideal weather conditions from May - permanent sunshine without excess heat, very little rain and cool nights - enabled slow ripening characteristic of years of legendary Bordeaux. The Merlots are as successful as the Cabernet: intense and elegant fruit, balance, depth, richness, concentration and extreme freshness, not to mention an almost unlimited aging potential. Only time will tell us if they prove as great as in 2000, 1989 and 1982 which already readily compared. Sweet wines are as grandiose, offering a nice balance between sugar / alcohol / acidity, and delicious candied nuances, roasted and toasted, which blend fine woody notes. On a more classic style than the exceptional 2003 they are nevertheless comparable to the magnificent 2001 and 1997, or even greater. |
