Sylvaner "VIN DE GLACE" 2007 - Jos Straub & Fils
This wine is a rarity that can be said exceptional: an Alsatian ice wine made from Sylvaner. Ice wine is harvested at a temperature of -7 ° C minimum -12 ° C, frozen grapes, quality ""Vallée Noble"", ""Late Harvest"" or ""Selection de Grains Nobles"" are pressed immediately. Thus each bay will deliver the quintessence of its juice (the water fraction of the bay is frozen and therefore not extracted). With high sugar concentration, have a freshness unusual, these wines have an incredible aftertaste. They keep almost indefinitely. The ""Eiswein"" German or Austrian are known. In France, few winemakers propose some years. In Alsace, only a few producers attempt to produce such a wine and when it's done well, it's simply outstanding.
